Healthy Chocolate Pudding (Gluten Free and Vegan)
So… I thought I was the only person to have come up with this idea. A quick search tells me this is anything but unique.
When I was younger I used to make this recipe a lot – when the house was empty, and even worse, when the cupboards were empty.
Turns out, there’s nothing else like limitation and desperate sweet cravings to spur on creativity in the kitchen.
At one point, of course, there had been very little in except for Greek yogurt, some dark chocolate, sugar, and probably some broccoli or something like that, too. And thus my not-so-original recipe was born.
Oh, well. It’s been done before. But in any case it was still one of the first recipes I ever created that worked, and so I must do it the honour of writing it down.
Ingredients
– 40g Vegan Greek Yogurt *
– 60g 70% Dark Chocolate
– 3 tsp Honey or Maple Syrup

Method
- Begin by melting the chocolate (Bain Marie if you’re being fancy, but the microwave is fine if done in 20 second intervals)
- Once melted, add half of the Greek yogurt and mix until the chocolate and the yogurt are completely incorporated. You will notice that the mixture thickens quickly, as the cold of the yogurt aids in the solidification of the melted chocolate, so it is best to mix quickly.
- When the mixture is incorporated, add the remaining yogurt until a smooth glossy texture is achieved.
- Add the honey or maple syrup (plus more to taste if desired) and mix one last time.
- Cover the bowl and place in the fridge to set and thicken. This should take no longer than half an hour but can also be eaten immediately if desired. The final texture after chilling should be thick and pudding-like.
